Avocado Toast with Egg and Cheese

Avocado Recipe with dippy egg and shredded cheese

  • 1/2 A Ripe Hass Avocado
  • 2 Eggs cooked over easy
  • 2 ounces Shredded Cheddar Cheese
  • 2 slices Whole Wheat Toast
  • 1 tsp olive oil
  • 1 dash salt and pepper optional
  • Step 1: Lightly toast the 2 slices of bread (or to desired darkness)

  • Step 2: Add the olive oil to the frying pan and heat on medium-low; crack two eggs into the pan and let them cook, only flipping when egg looks silghtly opaque

  • Step 3: Divide the half avocado between the two slices of toasted bread, and smash it into the toast with a fork and add the salt and pepper on top

  • Step 4: After the eggs are cooked to desired doneness, top each slice of toast with an egg, poking the side of the yolk to release the gooey goodness of the dippy egg over top the avocado and toast

  • Step 5: Sprinkle each slice of avocado toast with the cheddar cheese and enjoy your healthy, wholesome breakfast 😋🥑
