When you’re focused on chasing down a challenging goal – especially an athletic goal like running a half marathon or hitting a PR in the 5K -> a lot of energy is needed to get your body ready.
And it’s important to fuel yourself well to be able to perform. So eating a balanced diet is part of training.
Dialing in my nutrition and hydration was a game changer for my running. I feel faster and stronger when I eat enough carbs before a race or long run. And a medium potato has 26 grams of carbs.
Eating a balanced diet that includes the vitamins and nutrients that can help you perform your best is an important part of training.
Potatoes are a nutrient-dense vegetable that provides energy, potassium and Vitamin C. And they’re fat, sodium and cholesterol free.
Potassium is an electrolyte essential to proper muscle functioning. Potassium is lost in sweat, so it needs to be replenished for optimal performance.
Vitamin C aids in collagen production, a major component of muscle tissue, and supports iron absorption.
Ingredients:
- 4 medium Russet Potatoes (washed)
- 2 cups Broccoli (chopped)
- 1 cup Onion (diced)
- 2 cups Milk
- 2 cups Sharp Cheddar (shredded)
- 2 Tb Butter
- 2 Tb Flour
- 1 Tb Garlic Powder
- ½ tsp Thyme
- ¼ tsp Nutmeg
- Salt & Pepper
Directions:
- Slice potatoes into ¼ inch thick rounds.
- Melt butter in a skillet. Add onions & cook through.
- Season with salt & pepper. Add flour. Mix and cook for 1 minute.
- Add milk, garlic, nutmeg & thyme – simmer low for about 5 minutes.
- In a greased casserole dish layer: Potatoes, Broccoli, Cream Sauce, Shredded Cheese. (Season potatoes with salt & pepper with each layer.) *Last layer should be cheese.
- Bake at 400 degrees for about 40 minutes or until potatoes are soft and cheese is melted.
- Let set for about 15 minutes before serving.
