Got Milk? was an iconic phrase that was used to advertise milk consumption in America back in the 90s and early noughties. That was cow’s milk of course but, these days, there is an increasing variety of plant-based milk made with almonds, soy, oats, rice, hemp, and coconuts. There may have been limited options in South Korea but recently, the market has been growing rapidly. We discuss whether plant-based milk is good for you and why more and more people are choosing to go dairy free.
For this discussion, we’re joined by YANG Hee-dong, Professor of Business Administration at Ewha Womans University, and Crystal Kim, CEO, Fine Food Lab.
1. Professor Yang: What is the market for plant-based food (meat/milk) like in South Korea? Who are the main consumers?
2. Crystal: Why should people in modern societies, especially Koreans, consume plant-based milk? What are the nutritional benefits compared to cow’s milk?
3. Crystal: How is hemp milk made, and is it cost-effective?
4. Professor Yang: Why has plant-based milk like almond or soy milk been growing in popularity?
5. Crystal: Being a chef, it was probably very important for you to make the product taste delicious too. What does your hemp milk taste like β how did you choose the flavor?
6. Crystal: Are there environmental benefits of producing hemp milk compared to cow’s milk?
7. Crystal: How do you see the South Korean market for plant-based milk? What is the growth potential and who are your target consumers?
8. Professor Yang: How do you see the future potential for plant-based milk in the South Korean market?
That’s where we must leave things today, ANG Hee-dong, Professor of Business Administration at Ewha Womans University and Crystal Kim, CEO, Fine Food Lab, thank you for your insights.
