The water solution is yellow in color. To the same water solution, a few drops of HCI is added and the solution turns pink in color. This indicates that the dal is adulterated with Metanil yellow.
Metanil yellow is used in dal as an adulterant for colouring. Its presence can be tested in dal by adding a few drops of HCl to a test sample, if the solution turns pink in colour, it indicates the presence of metanil yellow.
Metanil yellow is a dye used to adulterate Arhar (Tuhar) dal. It is used to make the Tuhar dal look brighter in color. When the adulterated dal is washed with water, the water turns yellow in color.
Long term consumption of metanil yellow causes neurotoxicity in the brain. Its presence can be detected by adding a few drops of HCl to a toor dal. The presence of metanil yellow is indicated by the solution turning pink.
Sand, marble chips, stones are some of the adulterants found in pulses which affect the digestive tract. Asbestos in particulate or powder form (for polishing), which causes cancer. Metanil yellow (non-permitted food colour) is added to old stocks of pulses to enhance colour. The most dangerous adulteration in pulses is mixing kesari (Lathyrus sativus) in arhar dal.
