Cakey, healthy, YUMMY breakfast cookies! These are like heaven to me! You’ll need:
πͺ 2 super-ripe bananas, mashed
πͺ 1/3 cup almond butter or “mixed nut” butter
πͺ 1/4 cup pure maple syrup
πͺ 1 egg
πͺ 1 tsp vanilla
πͺ 1/2 cup tigernut flour (tigernuts are full of prebiotic fiber and great for digestion!!!) or gluten-free oat flour
πͺ 1 & 1/2 cups gluten-free quick oats
πͺ 1/2 tsp baking soda
πͺ 1/2 tsp baking powder
πͺ 1/4 tsp salt
πͺ 1 tsp cinnamon
πͺ 1/2 cup chocolate chips
πͺ 1/2 cup raisins
Mix. Bake at 350Β°F on lightly greased baking sheets. Let cool (at least a little bit) before eating… YUM! Try to save some for your family!
