Savoury-sweet and packed with tender chicken bites and a crunchy blend of cos lettuce, celery, cucumber and corn kernels, this salad is a texture sensation. Drizzle over the creamy Dijon-infused dressing plus a burst of citrus to bind all the fresh flavours together.

Ingredients:
- 1 head cos lettuce, shredded
- 2 stalk celery, finely diced
- 1 Lebanese cucumber, diced
- 1 cup corn kernels
- 2 tbsp red onion, finely diced
- 2 pickles, diced
- ½ bunch chives, finely chopped
- ¼ bunch dill, finely chopped
- 300g (10.5oz) cooked chicken, finely chopped
For the dressing:
- ⅓ cup Greek yoghurt
- 1 tbsp extra virgin olive oil
- 1 tbsp Dijon mustard
- 1 tsp maple syrup
- ½ lemon, juiced
Method:
To make the dressing, combine all of the ingredients in a bowl and whisk until smooth. Season to taste with sea salt and black pepper.
Add all of the salad ingredients to a bowl. Pour the dressing over the top and toss to combine.
