Gluten-Free Stir Fry – Wellness Wednesday With Cindy

Ingredients:
* 1 package kelp noodles (or use another noodle type, cook as directed)
* 3 tbsp tamari or coconut aminos
* 3 tbsp almond butter
* 3 tbsp olive oil
* 1.5 tbsp ginger (grated)
* 2 cups broccoli florets (1-inch pieces)
* 1 red bell pepper (matchsticks)
* 1 cup sugar snap peas (halved)
* 4 green onions (thinly sliced)
* 3/4 cup cashews
* 2 garlic cloves (minced)
* 2 tbsp lime juice + extra for serving
* Hot sauce (optional)

Instructions:
1. Soak kelp noodles (pre-cook other noodles). Cut kelp into smaller pieces.
2. Mix sauce: tamari, nut butter, lime juice, 1 tbsp oil, ginger, and water in a bowl.
3. Heat remaining oil, stir-fry broccoli & pepper for 1 minute. Add peas, cook 1 minute more.
4. Add onions, cashews, garlic for 30 seconds. Add noodles and cook 1 minute.
5. Mix in sauce, cook 1 minute more. Add cooked protein (optional).
6. Serve warm, cold, or as wraps with more lime and hot sauce (optional). Store leftovers in the fridge (4 days).

Tips:
* Use less noodles for smaller servings.
* Cut veggies smaller for faster cooking.
* Adjust sauce and spices to your taste.

Bonus:
* To save time, use pre-cut veggies or frozen broccoli florets.
* Make it vegan by skipping the optional protein.
